Ingredients:
- Basil pesto
- Dry tomatoes in oil
- If you like you can also add some grated Parmigiano cheese and finely chopped almonds.
This is a traditional Italian sauces which you can easily make yourself at home and use exactly the same way as you would do with basil pesto.
There are hundreds recipes for red pesto, but the basic ingredients are always the same and nothing can go wrong if you follow this instructions. The final taste will always be pleasant.
Procedure:
Simply blend some dry tomatoes in oil and mix it with basil pesto. The color of the mixture has to be red, this is the only suggestion I can give you.
It is up to you if you want to add more dry tomatoes, if you want more cheese and if you want more pine nuts (or almonds).
Suggestions:
If the quantity you obtain is too much to be used at once, remember that you can divide it in small containers and freeze it up to one month.
You could bottle it in nice jars, and make small gifts for your relatives and friends at Christmas with your private label!
Red pesto goes very well with cheese, eggs, pasta, bread, tuna, grilled vegetables and also grilled meat. It is a fabulous spread for a vegetable sandwich and also for hamburgers instead of ketchup.
You can really use it for all the recipes shown in this file. I would only avoid to use it with raw tomatoes.
