Roast tomatoes with pesto and bread crumbs

Ingredients for 6 servings:

  • 6 Tomatoes (large and ripe)
  • Basil pesto (2 tsp for each halve)
  • Bread crumbs
  • Grated Parmigiano cheese

Procedure

  • Heat oven to 190*C. Halve the tomatoes and arrange them in a single layer, in a roasting tin.
  • Spoon about 2 tsp pesto over each tomato, and sprinkle a mixture of breadcrumbs and grated cheese on the top. Then roast for 20 mins, until the tomatoes are tender.
  • The quantity of breadcrumbs and cheese is up to your liking.

Suggestion:

Serve with grilled lamb for a complete meal.
