Ingredients:
- Ready to use tomato soup (or pumpkin soup)
- Basil Pesto
- Croutons
Procedure:
- Simply heat the ready tomato soup and add a few drops of basil pesto to your liking.
- If you prefer to have a thicker soup you can add a handful of croutons.
Suggestions: you can add a few drops of sour cream or Greek yoghurt for a special touch.
You can use basil pesto in the same way, also on other creamy soups like: pumpkin soup or potato soup, or chickpeas soup, or bean soup or corn soup.
You can use Genovese pesto also to flavor a mixed vegetable soup. In this case we do not recommend to use cream nor yoghurt, but only basil pesto. If the soup should be too dense and you want to dilute it, it is enough to use some broth.
